Here’s a great recipe to fill your new favorite wrap!

Tuna Wrap:
2 cans tuna in oil
1 – 10 oz. bag multi-colored shredded carrots
1 bunch roasted broccoli (or Brussel sprouts – pictured)
1/4 red onion, sliced thinly
Red bell pepper pesto
Salt and pepper to taste
Stir it up and put it in your coconut wrap!

Bell Pepper pesto can be store bought or you can make your own. Here’s a tasty and easy recipe:
1 jar roasted bell peppers (we like Trader Joe’s)
2 garlic cloves
2 Tb walnuts
Olive oil
1/2 cup fresh basil
Salt and pepper to taste
Place all ingredients in food processor, adding enough olive oil while it’s blending to reach desired consistency
